RECIPIES > SAUSAGE STUFFED ZUCCHINI

 

 

Ingredients:
3 medium zucchini
1 lb sausage
2 cup chopped onion
1 cup chopped mushrooms
3/4 teaspoon salt
2 teaspoon chopped garlic
1/4 teaspoon black pepper
2 cup bread crumbs
1 egg
4 oz cream cheese (2 of a square)
1 cup grated cheese

Preperations:
Cut both ends off zucchinis and cut in half lengthwise. Scoop centers out with a teaspoon or rounded end of a vegetable peeler.
Place zucchini in a 13x9 pan-skin side down and set aside.

Cook sausage, onion, mushrooms, salt, pepper, and garlic in a large fry pan until sausage is browned. Drain off fat, then let cool slightly. Mix remaining ingredients with the sausage mixture while still warm (cheeses will melt and mix easier). Spoon mixture into zucchini shells.
Cover baking dish with foil and bake in 350* preheated oven for 1 hour or until zucchini is tende
